Can this be my private founder assistant?

Yes, with a dedicated workspace and selected access. OpenClaw assumes a trusted operator or mutually trusting team per gateway; separate audiences may need separate deployments and credentials.

Is self-hosting enough to keep everything local?

No. A hosted model, voice service or external tool may still process requests. We document which parts run on your infrastructure and which providers receive data.
